Ingredients
- 1 cup UNS microgreens
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cucumber, sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 1 tablespoon toasted sunflower seeds (optional)
Cooking Directions
- Preheat the grill or grill pan to medium-high heat.
- Rub the chicken breasts with olive oil, garlic powder, salt, and pepper. Grill the chicken for 6-7 minutes per side, or until cooked through.
