The Winter markets are coming up, and we will offer a wide selection of microgreens harvested in front of the customers and packaged at purchase (into your container or ours). We grow over thirty different varieties, and choose the ones that are at their peak for each Saturday’s Farmers Market. Pasture-Raised Broiler Chickens

Another offering from our outdoor farm is pasture-raised broiler chickens. You can contact us to reserve your broiler chickens for pick up or to schedule free local delivery.

Why is it good to eat pasture-raised chickens? “Pasture-raised chicken meat tends to be higher in iron, higher in Omega 3, have a lower Omega 6:3 ratio, and be higher in antioxidants (Vitamin E, for example).” – Mike Badger, American Pastured Poultry Producers Association

Why choose pasture-raised broiler chickens over cage free or free range chickens?

The main distinction between these types of chickens is that pasture-raised chickens generally have more space than ‘free range’ chickens do.

Here’s a recipe for cooking pasture-raised broiler chickens from Fed By The Farm’s website.

Whole Roasted Chicken (Pasture Raised)

INGREDIENTS

  • 3-4 lb whole chicken
  • 1/2 tbsp olive oil
  • 1 medium lemon quartered
  • 1 tbsp butter
  • 2 large rosemary sprigs finely chop just 1 heaping tsp, reserve the rest of the sprigs in whole
  • 1 small onion quartered
  • 1 tsp coarse kosher salt
  • 1/4 tsp ground pepper
  • 4 medium carrots cut in half lengthwise then chopped into 2-inch long pieces
  • 4 medium yellow or red potatoes quartered

INSTRUCTIONS

Before Roasting:

  • Drain the chicken and pat well to dry. Remove the thawed chicken from its wrapper. Tip the cavity over your sink drain to drain any excess. Pat the chicken well to dry. This will make it easier for your spices to adhere to the skin.
  • I then lay my chicken on a clean baking sheet to season it before placing inside my roaster. This gives me easy access to the full chicken and catches any drippings.
  • Preheat a conventional oven to 350 degrees.
  • Season your chicken. Rub the olive oil over the chicken, be sure to cover all the skin…top, bottom, around those legs and wings. I like to do this with my hands for best coverage.
  • Squeeze half the lemon over the bird on both sides.
  • Next, stuff the cavity. Use the lemon half you just squeezed, butter, rosemary sprigs and at least half of the onion.
  • Rub the salt, pepper and teaspoon of chopped rosemary all over your chicken.
  • Add the seasoned chicken and veggies to your pot. Put the chicken breast side down in a deep glass or cast aluminum dutch oven that has a lid. Breast side down will ensure the white meat stays juicy and flavorful!
  • Nestle the potatoes in around the chicken. Put the potatoes in before the carrots. As they sit on the bottom of the pan they roast in the juices. Then squeeze a quarter of the remaining lemon over your potatoes.
  • Now fill in the spaces in between and on top of the potatoes with the carrots. Optional: squeeze the rest of the lemon over the veggies and chicken. You can discard the remaining lemon peel, or stuff it inside the chicken if there’s room.

Instructions for Roasting:

  • Roast the whole chicken at 350 degrees. Count on about 20 minutes of roasting per pound of chicken, plus up to 15 additional minutes. Put the lid on your roaster and place it in the center of your preheated oven.
  • Your chicken is done when a meat thermometer inserted deep into the thigh measures 165 degrees. The meat should be pulling back from the ankle bone and the juices are running clear.
  • Remove from the oven and let sit for 15 minutes before carving. This will give the chicken’s juices some time to retract back into the meat.

We also sell eggs. Why buy pasture-raised eggs? According to Mike Badger, American Pastured Poultry Producers Association, they “have higher Omega 3s, a lower Omega 6:3 ratio, increased vitamin D, and more antioxidants.” Interested in our pasture-raised eggs?

Eggs From Our Hens

We sell eggs. Contact us to reserve your pasture-raised eggs for pick up at the farm or to schedule delivery (free with a $30 order of eggs and produce).

What Is So Special About Our Hens and Their Eggs?

  • They get good, healthy food, including organic natural scraps from the greenhouse
  • They get good exercise
  • They love sunflower seeds as special snacks, especially in the winter
  • They are cage-free, and free range and move from one pasture to another as weather permits
  • They have plenty of space in the chicken house which keeps them safe at night
  • In the chicken house they have a wonderful nesting box from which the eggs roll out into a clean trough for gathering them. The nesting box has red curtains (according to some studies, the color red attracts them)
  • Their chicken house is moved periodically to give them closer access to fresh ground, which improves their diet and our land
  • They always get clean water
  • They are happy chickens and love their care giver. They follow him around when he is outside
  • They eat bugs and worms outside for additional nutrition (“They eat bugs, not drugs.”)
  • No antibiotics or hormones are given to them. (We keep our flock under 150 chickens so that legally we aren’t required to give them antibiotics or hormones.)

Are Eggs from Pasture Raised Chickens Healthier?

Research from Penn State’s College of Agricultural Sciences found that compared to eggs from conventionally-raised chickens, eggs from pasture-raised hens had:

  • Double the amount of vitamin E and long-chain omega-3 fats
  • More than twice the amount of total omega-3 fatty acids
  • Less than half the ratio of omega-6 to omega-3 fatty acids

In addition to the extra nutrients, eggs from small farms are typically fresher because they are produced in small batches and sold quickly, rather than sitting on the grocery store shelf for a few weeks.

Our Barred Rock hens have large, vaguely triangular-shaped bodies with “sharply defined barred black and white feathers.” These easy to raise and friendly chickens are excellent egg layers, and come from healthy stock. This reliable breed gives us great eggs from our hens.

The Gold Star breed is a hybrid, designed to give us great egg production. Because these chickens are cold hardy and resilient. They have an even-keeled temperament for farm life.

Tomatoes

Tomatoes are extremely nutritionally dense. There are vitamins and antioxidants packed in each delicious fruit that support healthy skin, weight loss, and heart health.

The water content of tomatoes is around 95%. The other 5% consist mainly carbohydrates and fiber. One medium sized tomato contains only 22 calories. Pictured below are some of our Sun Gold tomatoes growing in our greenhouse.

Tomatoes can be a valuable part of a healthy diet. They are usually red when mature. They also come in a variety of other colors, including yellow, orange, green and purple. Shapes and flavors vary.

Ways to Eat Them

In fact, they are incredibly versatile and can be prepared in a seemingly endless number of dishes. Eat more of them by:

  • adding them to wraps
  • adding them to sandwiches
  • dicing for salsas
  • eating them whole or sliced in salads
  • cooked in sauces or purees
  • frying green
  • stewed in soups

Pictured below are some of the Campari variety on the vine. These midsized tomatoes are good for slicing or cooking in recipes or including in a salad.

Health Benefits

Now one of the most popular fresh-market vegetables, tomatoes rank behind only potatoes, lettuce, and onions.

  • Skincare. They contain a high level of Lycopene, a phytochemical used in facial cleansers. As you eat them, the properties in tomatoes also help protect you from sunburn.
  • Cancer Prevention. A number of studies indicate that the high levels of lycopene in this fruit work to reduce your chances of developing several types of cancer.
  • Strong bones. Tomatoes contain a considerable amount of calcium and Vitamin K. Both of these nutrients are essential in strengthening our bones. They also perform minor repairs on the bones as well as the bone tissue.
  • Essential antioxidants. Tomatoes contain a great deal of antioxidants. These work to neutralize harmful free radicals leading to cell damage. Cooking destroys Vitamin C, so for these benefits, they need to be eaten raw.
  • Heart healthy. The Vitamin B and potassium in tomatoes are effective in reducing cholesterol levels and lowering blood pressure.
  • Shiny, strong hair and eye health. The Vitamin A in tomatoes works perfectly to keep your hair shiny and strong. It is also fantastic for improving your vision. Eating them also prevents the development of night blindness.
  • Blood sugar levels. Tomatoes are packed full of a valuable mineral, chromium. Chromium works effectively to help diabetics keep their blood sugar levels under better control.

Tomatoes are often harvested and transported while still green and immature.  Then, they ripen when growers use artificial ethylene gas. This may affect flavor development, resulting in tasteless fruit.

Our Microgreens

Microgreens | Aquaganix Depot

Microgreens are a highly nutritious way to enhance salads, sandwiches, smoothies, soups, stews or serve as a garnish on omelets and casseroles. They are very popular in restaurants. Now you have a way to enjoy them at home and create your own healthful recipes.

WHAT ARE THEY?

They are the “youngster” version of full-grown, mature plants. Taste and nutrition are far more concentrated than that of their adult counterparts. They are available in many varieties, including peas, bok choy, sunflowers, mustard, radish, broccoli, kale, arugula, beets, watercress, chard, cilantro, basil, parsley, chives, and many more. We are also at your service to custom grow other, more specific varieties at your request.

HOW DO WE GROW THEM?

This type of green often grows in soil, but we use a clean soil substitute. We grow them indoors on natural fiber bio-degradable mats with purified water, paying special attention to temperature, air flow, and lighting. This helps us grow the highest quality microgreens year-round, without soil (avoiding soil-borne diseases).

We provide our microgreens intact, still rooted to their mat, not harvested. In this configuration, they remain fresh until you cut them (horizontally just above the mat, leaving the roots behind). Then, keep the mat cool and moist. The remaining uncut greens will stay fresh much longer, waiting for you to harvest them for your next recipe.

WHAT MICROGREENS ARE NOT

Microgreens are not sprouts.

  • “Youngsters,” they grow for a longer period than sprouts. They benefit from lighting. We eat only the leaves and stems.
  •  “Infants,” sprouts germinate from seeds. They grow without light.  We eat their leaves, roots and seeds.

Microgreens are watered differently than sprouts.

  • We water them from the underneath the mat, and then immediately drain them. This prevents the stems and new leaves from getting wet.
  • Sprouts are often watered from the top. They are soaked and irrigated frequently — a process that may cause high levels of moisture. This moisture, combined with warmth while germinating, can become a possible breeding ground for bacteria.

EGG WHITE OMELETTE WITH AVOCADO, GOAT CHEESE, AND MICROGREENS

(from the Merry Thought)

Ingredients:

  • 2 egg whites
  • 2 tsp milk
  • salt
  • pepper
  • sliced avocado
  • crumbled goat cheese
  • fresh microgreens

Directions:

  • Whisk together two egg whites and 2 tsp of milk
  • Add to a skillet with a light coat of cooking spray and then cook it over medium to low heat
  • Add salt and pepper (to taste) to the egg while cooking
  • flip the egg over when the bottom looks cooked
  • When done, transfer the omelet to a plate and then fill it with sliced avocado, crumbled goat cheese, and some fresh microgreens
  • fold in half
