Red Amaranth Microgreens and Grilled Chicken Salad

This hearty and colorful salad features tender grilled chicken with fresh Red Amaranth Microgreens, that are then tossed with crispy vegetables and a zesty balsamic dressing, making for a protein-packed meal.

Ingredients

  • 1 cup Red Amaranth Microgreens
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cucumber, sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon toasted sunflower seeds (optional)

Cooking Directions

  1. First, heat the grill or grill pan to medium-high heat.
  2. Next, rub the chicken breasts with olive oil, garlic powder, salt, and pepper. Grill the chicken for 6-7 minutes per side, or until cooked through.
  3. While grilling the chicken, use a small bowl to whisk together balsamic vinegar, Dijon mustard, and also a pinch of salt and pepper to make the dressing.
  4. Once the chicken is grilled, slice it and set it aside to rest.
  5. Then, in a large bowl, combine Red Amaranth Microgreens, cucumber slices, cherry tomatoes, and feta cheese.
  6. After this, toss the salad with the balsamic dressing, and then top it with grilled chicken slices.
  7. Garnish your salad with toasted sunflower seeds for an added crunch and then serve immediately.

We grow over thirty different varieties of microgreens and choose the ones that are at their peak for each Farmers Market. If you don’t see the specific microgreen you are looking for at the market, we welcome your special orders upon request. You can either schedule for pick up or arrange for us to deliver your microgreens to you. Free delivery service is available within a 25 mile radius of our greenhouse located in Dousman, WI.

Basil Microgreens | Genovese B | Aquaganix Depot

Garlic and Lemon Pasta with Basil Microgreens

Ingredients

  • 1 pound spaghetti, dry
  • ½ cup olive oil extra virgin
  • 2 tablespoons butter
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • ¼ cup chicken or vegetable broth
  • ⅛ teaspoon freshly ground pepper
  • ¼ teaspoon salt
  • 1 cup basil microgreens
  • ½ cup chopped fresh parsley
  • freshly grated Parmigiano-reggiano

Directions:

  1. Cook spaghetti in a large pot of salted boiling water until al dente.
  2. Meanwhile, in a small saucepan, heat oil and butter over medium-low heat. Stir in garlic, lemon zest, lemon juice, broth, salt and pepper. Raise heat to medium-high. Bring to a gentle simmer, reduce heat and simmer for 3 minutes.
  3. Drain the pasta. Return it to its cooking pot and immediately pour the heated sauce over it. Add basil microgreens and parsley. Use tongs to gently toss the pasta and sauce together. Transfer pasta to a heated serving bowl.
  4. Top with grated Parmigiano-reggiano, a light sprinkling of sea salt and freshly ground pepper and a squeeze of lemon juice.

The leaves of nasturtium microgreens are packed with nutrition, containing high Vitamin C levels, manganese, iron, flavonoids, lutein and beta carotene. Jewel Mix Nasturtium produces a beautiful large-leaf microgreen with a peppery flavor.

This nasturtium is a dwarf variety that performs well as a microgreen. It has a peppery flavor that can taste spicy to some. This Jewel Mix nasturtium is especially attractive as a microgreen because of its unique, large-leaved foliage.

  • Just like herbs or salad greens, nasturtium microgreens are tasty when eaten raw and fresh 
  • Mix them into potato or egg salad
  • Add nasturtium microgreens to sandwiches
  • Stir them into sauces and dips
  • Blend them into butter or soft cheese for an added spicy flavor
  • Add nasturtium leaves to oils, dressings, or vinegars
  • Garnish – muffins, soups or stews
  • Omelets – mix with chives
  • Cooked dishes – should be added in the last few minutes
  • Mix them into your favorite sushi rolls
  • Street Tacos – add finely chopped nasturtium right to the taco meat just before taking it off the heat.
  • Guacamole & Salsa – add raw, finely chopped nasturtium (great as a substitute for fresh hot peppers)
  • Salad Toppings – add finely chopped nasturtiums to salads. It’s good to pair them with sweeter greens, spinach for example, to offset their peppery taste
