NUTRITION
Cabbages are a good source of vitamin C and also contain dietary fiber. All of the different varieties contain many phytonutrients, particularly phenolic compounds, glucosinolates, and carotenoids.
VARIETIES
Color varieties include red, green or white. Their textures are also different – smooth or crinkled leaves, and are round or oval in shape. Taste variations are subtle.
GREEN CABBAGE
These are the most widely grown and are available all year. There are several types of green cabbage. Drumhead is a popular variety with smooth compact leaves. Savoy has crinkly leaves with very good flavor.
One of the favorites here at Aquaganix Depot is Copenhagen Market, a tasty heirloom variety which was first introduced in the United States in the early 1900’s. We also offer this variety as a wonderful microgreen to enhance salads, casseroles, and smoothies.
STORAGE
You can safely store cabbage in plastic bags in your refrigerator. Remove any tough, coarse or damaged leaves. Cut or shred depending on requirement.
WAYS TO EAT
- Boil, steam, or microwave it’s leaves for a short time until tender, but still slightly crisp. Serve as soon as possible after cooking.
- Stuff cabbage leaves with a savory filling and then simmer in liquid until tender.
- Shred it raw for coleslaw or stir fry.
- Pickle shredded cabbage for sauerkraut.
RECIPES
Stir frying retains the flavor of vegetables. Don’t overcook the cabbage and serve it as soon as it is cooked. So simple – and so delicious.
